Ribs (baby back or St. Louis - your choice)

Salt and pepper ribs, both sides. Wrap each individual piece in foil and place on cookie sheet. Bake at 275º for 2 1/2 hours. Remove ribs from foil and save fat. Add the rendered fat to your favorite BBQ sauce, mixing well. Finish ribs on grill basting each side with the sauce. Ribs are already cooked, therefore, grill to desired look and crispiness.

I like baby backs over St. Louis ribs...less cartilage to deal with. Baking the ribs low and slow dissolves any membrane on the underneath side of the ribs. Cutting a full rack in half before baking makes them easier to handle on the grill. Adding the rendered fat into the sauce adds flavor.
