4 potatoes
1 onion, chopped
4 strips bacon
4 cans chopped clams
1/2 cup butter
1 cup Half and Half
Fresh Italian parsley
salt and pepper

Directions:
Directions:
Cut bacon into pieces and cook until crisp.

Remove bacon and leave fat in pan and add chopped onion and cook until tender.

Peel and cut potatoes in 1/2 inch cubes. Put potatoes, onions and bacon in large pot and drain clam juice from cans into the pot. Add enough water to just cover the potatoes.

Simmer for about 30 minutes or until potatoes are soft but not mushy.

Add clams, half and half, butter and a couple tbsp of parsley and cook until heated thoroughly. Salt and pepper as needed.

To thicken you can use potato masher and slightly mash potatoes or stir in 1 tbsp. of cornstarch with a small amount of milk and stir in.
