5 large eggs
100 gm. Gouda cheese cut into 24 cubes
1/4 cup milk
2 cups spinach (fresh or cooked down)
Olive oil spray

Directions:
Directions:
Preheat oven to 325°F - 350°F depending on your oven
Cook the spinach with a couple of sprays of olive oil. Remove from heat and set aside
Cut up the Gouda cheese into 24 1/2" pieces
Mix up the eggs and milk in a bowl
Spray down a 24 cup mini muffin pan with some of the Olive oil spray
Put some of the spinach in each cup
Evenly pour the egg mixture into each of the cups
Place one of the cubes of cheese into each cup
Bake for 15 to 25 minutes depending on how firm you like your eggs. Can be checked with a toothpick.
