Cake:
4 Eggs
2 tsp Baking Soda
2 tsp Baking Powder
3 Cups Grated Zucchini
1 Cup Oil
2 Cup Flour
2 ½ Cup Sugar
1 tsp Cinnamon
1 tsp salt

Frosting:
2 Cups Powdered Sugar
1 Stick Butter, softened
1 tsp Vanilla Extract
8 oz Cream Cheese, softened

Directions:
Mix all cake ingredients together and then add zucchini. Bake at 350º for 30-40 minutes.

Let cake cool completely and the frost. Keep refrigerated.

Its a good thing we all like zucchini cake because Grandpa McConnell has a green thumb when it comes to raising zucchini. We make cakes and put into the freezer so we have zucchini almost all winter.
