1 c. all purpose flour
½ c. ground almonds (2½ oz.)
3 tbsp. sugar
6 tbsp. butter or margarine
1 beaten egg yolk
2 tbsp. water
⅓ c. sugar
3 tbsp. cornstarch
¼ tsp. salt
1¾ c. light cream or milk
2 tbsp. honey
6 beaten eggs yolks
¼ c. orange juice
1 c. sliced plums, peeled and sliced kiwi, or mandarin orange sections, drained
¾ c. sliced strawberries or seedless red grapes, halved
¾ c. peeled, pitted and sliced nectarines, peaches, or pears
⅓ c. orange marmalade

1. For pastry: In mixing bowl stir together flour, ground nuts, the 3 tablespoons sugar and dash of salt.
2. Cut in butter or margarine till mixture resembles coarse crumbs. Add 1 egg yolk and the water; stir till flour mixture is moistened. Work mixture with hands till well blended.
3. On a lightly floured surface roll dough into a 13 inch circle. Gently wrap pastry around the rolling pin. Loosely unroll dough onto an 11 inch flan pan.
4. Ease the dough into the flan pan. Be careful not to stretch pastry. Trim edges of pastry to fit pan.
5. Line the unpricked pasty with a double thickness of heave-duty foil. Bake in a 375º oven for 10 minutes; remove foil. Bake 8 to 10 minutes more or till golden brown. Cool thoroughly in pan on wire rack.
6. For pudding filling: In medium saucepan combine the ⅓ cup sugar, the cornstarch, and salt; stir in light cream or milk and honey. Cook and stir til thickened and bubbly. Cook and stir 2 minutes more.
7. Gradually stir about 1 cup of the hot mixture into the 5 egg yolks; return to mixture in pan. Cook and stir till thickened and bubbly. Cook and stir 2 minutes more. Remove from heat.
8. Stir in orange juice. Cover the surface with clear plastic wrap or waxed paper; cool completely without stirring. Spread cooled mixture into pastry shell; chill.
9. About ½ hour before serving, arrange plum slices, kiwi slices, or mandarin orange sections around the outer edge of flan atop filling. Arrange strawberries or grapes just to the inside of plum slices. Next arrange nectarine, peach, or pear slices spiral fashion in the remaining area.
10. Remove flan from pan; transfer to platter. In a small saucepan, melt marmalade; spoon over fruit. Chill till serving time.
