Pie crust for top and bottom crust
5-6 cups blackberries, rinsed and patted dry
1/2-3/4 cup sugar, depending on berries
1 tsp lemon juice
1/2 tsp. ground cinnamon
1/4 tsp almond extract
4-6 T cornstarch

Toss berries with sugar, lemon, cinnamon, almond extract and corn starch. Gently fold the berries until they are well coated with the sugar. Let sit for 30 minutes.

Preheat oven to 400.
Roll out bottom crust. Place in the bottom of 9 inch pie pan.
Roll out top crust. Place berries into pie pan. Top with top crust. Bake at 400 for 30 minutes. Reduce the heat to 350 and continue baking for 30 minutes.
Might want to place some foil underneath pie plate to catch drippings. Can cover edges of pie the last 30 minutes to prevent over browning.

I like to use an iron skillet instead of a traditional pie plate.
