Sweet Potato Mixture


Ingredients:

2 ½ lbs sweet potatoes
¼ cup butter
1 Tbsp granulated sugar
1 egg, beaten
½ tsp vanilla

Directions:
Directions:
1. Preheat oven to 375º.
2. Peel potatoes and cut in chunks; cook in salted water until tender. Drain well, then mash. You should have about 4 cups.
3. Add butter, sugar, egg, and vanilla; mash well and pack into 3-quart casserole dish. Set aside.
4. Make topping (below); spread over sweet potatoes.
5. Bake until heated through and topping starts to brown, about 30 minutes.

1 cup brown sugar, packed
½ cup whipping cream
¼ cup butter
1 cup pecans, chopped

Directions:

1. In a small saucepan, combine brown sugar and cream. Stir, bringing to a boil over medium heat.
2. Cook until soft balls are reached on candy thermometer or a tsp dropped in very cold water forms a small ball.
3. Remove from heat and stir in butter and pecans.
