1/3 cup butter
1/3 cup chopped onion
1/3 cup chopped celery
1/3 cup diced tart green apple
giblets, chopped
1/4 cup slivered blanched almonds
1/8 tsp pepper
3/4 chicken stock or water
1/2 tsp poultry seasoning

Directions:
Directions:
Cook onions until straw colored. Add 2 1/2 cups cooled bulgar/soy, blanched almonds, pepper, poultry seasoning and chicken stock. Cover and cook over moderate heat until all liquid is absorbed. Makes approximately 4 cups.
