Ingredients: CAKE 1 C honey 3/4 C brown sugar 1 egg 1 Tbsp lemon juice, generous 1 tsp lemon zest 2 C flour 1/8 tsp baking soda 1/4 tsp salt 1 tsp cinnamon 1/2 tsp ginger 1/4 tsp nutmeg 1/2 tsp allspice 1/2 tsp mace 1/8 tsp cloves 1 C candied citron peel 1 C sliced almonds

Directions: CAKE Put the honey in a pot and bring it to a boil - stirring constantly. Cool to room temperature. Stir in sugar, egg lemon juice and zest. Sift together the flour, baking soda, salt and spices. Pour the wet mixture into the dry. Add nuts, candied ginger and lemon peel. Cover and refrigerate overnight or at least 8 hours to blend spices. Grease 11" x 17" baking sheet with sides. Distribute the dough into the greased baking sheet with a spatula dipped in cold water. * dough will be very stiff. Bake at 350º F for 10-15 minutes.
GLAZE Squeeze 1 or 2 lemons and add enough icing sugar to make a thicker pourable glaze. (About 3 Tbsp of the juice from the lemons and ~1 C or less of icing sugar) Drizzle of brush the icing on while the cake is still hot. Cut it into pieces when cold.
Tips: Mucki suggests getting the candied citron peel from the Italian Bakery on Quadra St. in Victoria - nothing tastes better! Store in an airtight container with a cup of orange or apple for a few days to mellow.

Notes: This is another recipe that came from Harry's family, passed own from many generations. The lemony glaze makes this spectacular! Mucki makes it every year at Christmas and we get to enjoy!
