Ingredients: 1 can San Marazano tomatoes (28 ounces), crushed 2 tablespoon olive oil ½ yellow onion, minced 1 teaspoon garlic, minced 5 leaves Basil Leaves, fresh, torn pinch of oregano pinch red pepper flakes ¾ teaspoon granulated sugar sea salt to taste black pepper to taste

Directions:
Combine dry spices, set aside.
Heat a sauce pan over medium-high heat. Add olive oil and onions. Reduce the heat to medium and cook the onions, stirring occasionally for approximately 5 to 10 minutes, or until soft and slightly golden.
Add the garlic and basil leaves and cook for approximately 1 to 2 minutes, or until fragrant and the basil leaves have a wilted slightly.
Stir in the tomatoes and season with oregano, red pepper flakes, and sugar. Bring the sauce to a light simmer and cook, stirring occasionally, until the sauce is slightly thickened, approximately 45 minutes.
Season to taste with salt and fresh ground pepper. Use immediately or store in refrigerator for up to a week.
Custom Sauce:
2-3 tablespoons Red Wine vinegar ie: Chianti. 2-3 tablespoons herbs as desired. Or mushrooms; sauté separately to release excess water, just like sweating (spinach, zucchini) out onions.
