1 lb. goat cheese, Chevre
1 egg
1 Tbsp. bread crumbs
salt to taste
white pepper to taste
1 package of 3X3 inch Wonton skins
1 egg beaten

Brown Butter Sauce:
1/2 lb. salted butter
1/2 lb. unsalted butter
1 1/2 quarts heavy cream ( add sparingly until desired consistency)

1/2 lb. Pancetta, diced
2 Tbsp. olive oil

1/2 lb. Parmesan Reggiano, shredded
Italian parsley and chives, equal parts, chopped

Mix goat cheese, egg, bread crumbs, salt, and pepper with mixer that has a paddle attachment (this can be done by hand wit a large spoon), until well incorporated. Spoon one tablespoon of stuffing onto the center of each Wonton square. Brush edges of Wonton squares with beaten egg to hold sides together. Fold over edges of Wonton to make a triangle. Seal by pressing gently with tines of fork. Drop ravioli into boiling water. When they float they are done.

Brown Butter Sauce: heat butter on medium heat until light brown. Add cream slowly and whisk until desired consistency, heating until it thickens.

Dice: the Pancetta 1/4 inch thick, cook in olive oil over low heat till crispy.

Serve cooked pasta with grated browned butter sauce, sprinkled with Parmesan, fried Pancetta, and chopped herbs.
