3 lbs sweet potatoes or yams (about 4 large), peeled and cut into chunks
2 lbs medium carrots, cut into ½-inch chunks
1 package (12 oz) pitted prunes, cut in half
1 cup orange juice
1 cup water
¼ cup honey
¼ cup packed brown sugar (okay to use Truvia brown sugar stevia blend)
2 tsp ground cinnamon
¼ cup butter, cubed

1. Preheat oven to 350º.
2. In a greased 13" x 9" baking dish, combine sweet potatoes, carrots, and prunes.
3. In a separate bowl, combine orange juice, water, honey, brown sugar, and cinnamon; pour mixture over potatoes, carrots, and prunes.
4. Cover and bake for 1 hour. Uncover and dot with butter. Bake 45 to 60 minutes longer, carefully stirring every 15 minutes or until vegetables are tender and sauce is thickened.
