Ingredients: FILLING 1 medium onion 3 garlic cloves 1 1/2 C finely diced ham 1 C finely diced pork 2 finely diced celery stalks 2 med leeks - chopped 2 C finely shredded cabbage 2 C bean sprouts 3 Tbsp Ketjap Manis 4 Tbsp sambal oelek 2 Tbsp oil 1 tsp each of salt and pepper
PANCAKE 1 1/2 C flour 1/3 C cornstarch 1 egg 1 1/2 to 2 C cold water 1 tsp salt
1 egg for sealing the pancake Vegetable oil for deep-frying

Directions:FILLING Brown the onion in a fry pan with the garlic. Add the ham, pork, ketjap manis and sambal oelek. Simmer for a few minutes. Add the celery, leeks and cabbage and simmer for a few more minutes. Remove the pan from the heat and gently stir in the bean sprouts. Let cool - uncovered.
PANCAKE Combine all the indredients for the pancakes into a blender. Mix well - add more water if too thick. It should be thin - similar to the dutch pancake consistency. Pour enough mixture onto a preheated fry pan at medium heat. Tip the pan to coat the fry pan and cook only until the top is dry. Cool the pancakes - don't stack them.
Drain excess liquid from the cooled filling mixture. Place ~1/4 C filling in the center of each pancake and brush egg on the edges. Fold the pancake around the filling - see photo. Make sure to brush egg on to seal the pancake closed.
Gently place the loempia in the preheated (190º C) deep-fryer. Turn when the first side is brown.
Remove from the fryer when the second side is brown and drain on paper.
SAUCE Mix a small amount of sambal oelek and ketjap manis together for traditional sauce. Also tastes good with bottled sweet chili sauce.
Serve hot with sauce.
Tip: If you make extra filling it can be served the next day over noodles or for lunch in rice paper wrappers and eaten cold. |

Notes: I think this might be my favourite meal! My dad (Opa Willie) loved to cook Indonesian style food and used to make these for special occasions. He came to visit us in Smithers one winter and he and I went to work in the kitchen. I am so grateful that I got to spend that time with him!
