Crepes:
2½ cups flour
6 eggs
3 cups milk
1 tsp. salt
6 tsp. melted butter

Filling:
3½ lbs. cream cheese
1 cup sugar
1 tbsp. almond extract
chopped toasted almonds

Apricot Sauce:
3 large cans of apricots
½ can water
3 tbsp. confectioners sugar
3 tbsp. cornstarch
5 tbsp. apricot brandy

Sauce:
1. Drain apricot juice
2. Puree apricots in blender with cornstarch, sugar, and cold water.
3. Add to juice and cook
4. Add brandy

**Garnish with apricots and almonds
