1 1/2 lbs. boneless pork loin, cubed
2 Tablespoons oil
.75 pkg brown gravy mix
1 cup water
1/4 cup honey
3 Tablespoon soy sauce
2 Tablespoons red wine vinegar
1/2 teaspoon ground ginger
1/8 teaspoon garlic powder
1 green pepper, chopped
1 red pepper chopped
OR purchase a bag of frozen, fajita style cut mixed peppers
1 onion, chopped

Directions:
Directions:
In a large skillet over medium heat, sauce pork in oil until browned, about 15 minutes.

Add gravy mix, water, honey, soy sauce, vinegar, ginger and garlic powder; stir well.

Cover and reduce heat to low; simmer for 15 minutes, until sauce thickens.

add peppers and onions. At this point, the dish can be cooled and frozen for a later meal, or simmer until vegetables are tender.

Sometimes I will cube leftover pork roast and slice up a pepper and freeze them together. When I need a quick meal, I’ll dump all the ingredients in a saucepan and heat it up.
