1½ pounds ground beef
1 onion, chopped
1 red or green bell pepper, seeded and chopped
1 can (6 ounces) tomato paste
1 cup water
3 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon paprika
1 teaspoon ground cumin
1 tablespoon apple cider vinegar
3 tablespoons maple syrup
1 teaspoon dried oregano
½ Celtic sea salt
½ teaspoon fresh ground pepper

Directions:

In a large skillet over medium heat sauté beef for 5 minutes. Add in onions and peppers. Cook 5 minutes more. Add remaining ingredients and simmer until mixture thickens.


Comments:

Side suggestions: baked sweet potatoes, sautéed butternut squash or other winter squash; sautéed broccoli, spinach or kale with coconut oil and season with unrefined sea salt and peppers.

Makes a great “Sloppy Salad” served on top of a bed of lettuce with avocado, tomatoes and other vegetables.

Turn into a Sloppy Joe Skillet by adding shredded sweet potato and broccoli, cabbage or brussels sprouts in the last 10 minutes of cooking. Cook until vegetables are soft as you like.

Recipe can be frozen.
