Spice mix:
5 tsp cumin seeds
5 tsp coriander seeds
2-1/2 tsp allspice
5 tsp ground nutmeg
2-1/2 tsp ground ginger
1-1/4 tsp ground red pepper
1-1/4 tsp ground cinnamon

1 tsp olive oil
3 cups vertically sliced onion
1/2 tsp salt

1-1/2 tsp sugar
1-1/2 tsp pepper
1 can chicken broth

1/4 cup raisins
6 chicken thighs
1 can garbanzo beans, drained and rinsed

4 cups hot cooked couscous

Directions:
Directions:
Grind the spices in a food processor or coffee grinder until finely ground.

Heat oil in a large, deep skillet. Add onion, salt, and pepper, cover and cook 5 minutes.

Add 2 tbsp spice mixture and remaining ingredients to the skillet. Cover and cook on low for about 30 minutes or until chicken is done.

Serve with couscous.

The remaining spice mixture freezes well - keep for another meal.
