2 lb dried great northern beans
3 c diced cooked ham
2 c diced celery with leaves
1 c sliced carrots
c cooked green onion with tops
1 pod hot pepper (1/2 tsp tabasco)
1 c peeled, chopped tomatoes, fresh
2 tsp salt
tsp pepper

Directions:
Directions:
Sort and wash beans; place in a LARGE dutch oven. Cover with water 2 above beans; let soak overnight. Drai. Add 4 qts water; bring to a boil reduce heat to medium; cook uncovered, 1 hours, stirring occasionally. Add ham, celery, carrots, onion and hot pepper. Cook, uncovered, 1 hours, stirring occasionally. Add tomatoes, salt and pepper cook and additional 15 minutes. r
