Angel Biscuits Recipe

5 cups of flour
1 teaspoon soda
1 teaspoon salt
3 teaspoons baking powder
3 Tablespoons sugar
3/4 cups cold butter
1 package yeast - (2 1/4 Tablespoons)
1/2 cup lukewarm water - lukewarm means warm to the touch but not hot enough to make you wish you hadn't touched it.
2 cups buttermilk - the real stuff


Sift together flour, soda, salt, baking powder, and sugar.
Cut into this with a pastry blender the butter. Till mixture
looks like small crumbs.
( You could use a food processor.)

Place water in a small bowl sprinkle over yeast. Add 1 teaspoon sugar and let set about 5 minutes until the yeast begins to bubble. (This helps makes certain the yeast is actually going to work.)
Stir the yeast mixture into the flour mixture and then stir in the 2 cups buttermilk about 1/2 cup at a time.
Yes it seems to make a consistency difference the way you add it.
Place this in a large bowl, cover and refrigerate overnight.
Place half of the mixture on a floured surface knead till it holds just together (don't add to much flour at a time)
roll to 1/2 inch thickness cut into biscuits.
Mother always then placed these on a cookie sheet well oiled. Oiled enough that she would put the first side down,
and then flip it over so that both sides were oiled.
Ist time I watched this I thought well that looks like a lot of oil! But it really helps the biscuits to rise, so do it!
Let these rise around 20 - 30 minutes and bake at 400 degrees.
Prepare the second half of the dough in the same way, or if you prefer you can refrigerate some of this
dough for up to 4 days.
This yields approximately 20-24, 3 inch biscuits.

Who remembers when mom would have started making these biscuits??? I remember all the reunion breakfasts
and Christmas breakfast where these are so good with gravy. I often wondered if she knew what she had started
when she made these for us. Seems like no other biscuit comes close to being as good as these!
