1 cup shortening
1¾ cup sugar
2 eggs
1 tsp vanilla
1 tsp lemon extract
1 cup crushed pineapple with juice
4 cups flour
½ tsp baking soda
1 tsp salt
2 tsp baking powder
Directions:
Directions:
Cream together shortening and sugar
Add eggs and beat
Add vanilla, lemon extract, and pineapple.

In large bowl sift together flour, soda, salt and baking powder.
Slowly mix in with wet ingredients

Bake at 375º for 10 minutes

Glaze:
1¾ cup powder sugar
¼ cup lemon juice
Zest of one lemon
1 tsp butter, melted

Mix together and pour over slightly cooled cookies
