2 c. cooked brown rice

Directions:
Place brown rice, rice flour, oil, vinegar and seasonings in a food processer. Run til finely ground. Remove plunger from feed tube and while running, slowly add water to form a soft, crumbly mixture. Transfer to a bowl and knead to combine into a slightly oily dough. Divide into 4 equal parts.
Preheat oven to 375ºF. Make 2 cookie trays ready with parchment paper. Roll each dough piece into a 6-5 inch log and cut crosswise into 10 pieces.
With your hands, roll each piece into a small ball. Then with a juice glass, press each ball between 2 pieces of freezer weight plastic ( I cut open a med. sized freezer bag) into a 2 1/2 inch diameter round. Remove the top plastic and flip onto the cookie tray.
Bake 8 minutes at 350º F (330º F Convect), flip crackers and bake 8 min more.
