Dissolve 6 tsp. yeast in ½ c. warm water; set aside.

Scald 2 c. milk. (454 g)
Add 1 c. butter
1 c. sugar (198 g)
2 tsp. salt
8-10 crushed cardamom seeds *
Cool to lukewarm.

Beat 2 eggs in a bowl; add milk mixture, then yeast mixture. Add 2 c. flour (240 g) and beat hard. Add enough additional flour (6 to 8 c. additional [720 - 960 g]) to make a soft dough and knead well.

Grease dough, cover, and let rise until doubled in size.

*May substitute cardamom powder, but seeds better

Take a small amount of dough and roll into strips about four inches long, and make a pinwheel. Place on greased pans and let rise until double in bulk. Bake in a 375º oven for 12 to 15 minutes.

Bread:
Make long strips of dough - about 10 to 12 inches in length and braid 3 together to form loaves. Bake in a 375º oven for 35 to 40 minutes or until done. Makes 3-4 loaves depending on pan size.

Before baking: Bruch rolls and loaves with beaten egg and sprinkle with cinnamon and sugar mix.
