2 1/2 to 3 cups pecans
1 cup sugar
1/2 cup water
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 teaspoon vanilla

Directions:
Directions:
Preheat oven to 350º

Spread nuts on a jelly roll pan and bake for 5 minutes.

Turn off oven and leave nuts in.

Mix:
1 cup sugar
1/2 cup water
1 teaspoon cinnamon
1/2 teaspoon salt

Bring to a boil on high heat. Clip on candy thermometer and cok to 238 degrees

Remove from heat and beat with a wooden spoon for 1 minute or until almost creamy.

Add:
1 1/2 teaspoon vanilla
Nuts

Stir to coat, dump out on a cookie sheet and separate with two forks.
