Moroccan Chicken with Couscous Recipe

Rub ingredients:
1 tbsp paprika
2 tsp ground cumin
1/2 tsp salt
1/2 tsp ground turmeric
1/2 tsp ground ginger
2 gloves garlic, finely minced

6 boneless, skinless chicken breasts
1/3 cup flour

1 cup chicken broth
1/2 cup lemon juice
10+ Kalamata or Greek olives

1/4 cup chopped fresh cilantro
1 tbsp grated lemon peel
6 cups hot cooked rice or couscous

Preheat oven to 350.

Mix the rub ingredients in a small bowl and rub on all sides of the chicken, then coat the chicken with the flour. Place chicken in a 9x13 baking dish.

Mix broth and lemon juice and pour over the chicken. Add olives around the chicken.

Bake uncovered about 1 hour, basting occasionally, or until chicken is done.

While chicken is baking, make couscous and stir in cilantro and lemon peel.
