4-6 boneless, skinless chicken breasts
1/2 cup onion, chopped
6 garlic cloves, minced
1 tbsp olive oil

1 cup chicken broth
1 cup picante sauce
1 cup white rice

Garnish:
Mozzarella cheese, shredded
Avocados, sliced
Fresh diced tomatoes

Directions:
Directions:
Saute the chicken breasts, onion and garlic in the olive oil until chicken is browned.

Add chicken broth, picante sauce, and rice, stirring to mix well.

Cover and simmer 30-40 minutes, or until chicken is done.

Serve with garnishes.
