1½ lbs. 90-94% lean ground turkey or beef (optional)
¼ cup chopped onion
¼ cup chopped celery
1 medium bell pepper, chopped
1 clove garlic, minced
32 oz. reduced sodium chicken broth
1, 14.5-oz. can petite diced tomatoes
1 cup chopped cabbage
2 cups frozen cut green beans
1 bay leaf
1 tsp dried parsley flakes
¼ tsp each: salt & pepper
½ tsp each: dried thyme & basil

1 Lightly grease a large soup pot.
2 Brown ground beef or turkey.*
3 Add onions, celery, bell pepper, and garlic, and cook until vegetables are crisp-tender.
4 Stir in the remaining ingredients, and bring mixture to a boil.
5 Reduce heat, cover, and simmer until vegetables are tender, about 30 minutes. Remove bay leaf before serving.
*Skip this step if omitting ground beef or turkey.
