6 large chicken breast halves
¾ c. green salsa
3 T brown sugar
1 T dijon mustard
1 pkg sliced swiss cheese

Directions:
Directions:
Place chicken breast halves, with thickest sides to the edges/ends of a 9x13 lightly greased baking dish. Cover all with slices of swiss cheese. Mix the salsa, brown sugar, and dijon mustard together and pour over the swiss cheese. Bake at 375º for 45-60 minutes (depending on thickness of the breast pieces). Should turn golden brown when done. Option: If a thicker sauce is preferred: After baking, remove breast pieces and pour sauce into a sauce pan. Thicken sauce with a little cornstarch mixed with water. Return chicken to baking dish (or warmed serving dish) and pour sauce over the cheese-coated chicken.

This chicken dish is a little different because of the sweetness added by the brown sugar, and the tangy hint from the dijon mustard. Swiss cheese is our preference but almost any white cheese that melts well will work.
