3-4 lbs Roast Beef
1 Split Soup Bone
1 lb Carrots
1 large Onion
Chopped Celery to desired amount
Chopped Parsley to desired amount

Directions:
Directions:
1. Place Beef and Soup Bone in a large pan and cover with water and cook until beef is cooked. Let sit and skim off scum after 10 minutes.

2. Place Carrots, Onion and Celery in Beef pan and cover with water. Add Salt to taste and cook for 5 hours.

3. Cover pan with a lid and let stand over night so the fat rises to the top.

4. The next day remove ¾ of the fat from the top and throw away.

5. Reheat soup and serve with dumplings.
