700 ml warm water
1 tbsp. liquid honey
1 tbsp. lemon juice
a total of 1 kg flour
heaping spoonful of ground flax
2 tsp salt
2 tsp granulated yeast (regular active dry yeast)

Pour into bread machine pan:
700 ml warm water
add 1 tablespoon each lemon juice and liquid honey (or add 1 tsp sugar if no honey)
Place pan on kitchen scale and zero.
put in 2 cups whole wheat flour, then add white flour (around 4 cups more) until scale reads 1020 grams. Put on top a heaping tablespoon of ground flax, then add 2 rounded teaspoons salt and 2 teaspoons active dry yeast sprinkled over top. Place in bread maker, then chose "dough only". When the dough is mixed and kneaded (takes 1/2 hour in my bread maker) remove and let rise on the counter covered with a tea towel. I do not prefer to let it rise for the allotted 1-1/2 hour cycle in the breadmaker before forming loaves, as I find this too warm. It will balloon over the pan! After it has risen to double, form into 2 loaves on parchment paper on a cookie sheet Let rise about 35 minutes, then bake at 350º for 50 minutes. Cool on wire rack. I often place the bread into the cold oven to rise (my oven has a "bread proofing" cycle but I do not prefer to use it.) then I set the delay timer to start about 35 minutes after this and chose the baking time 50 minutes, which frees me up to come back when it is done to remove it.
