1 package (3 oz.) peach gelatin
¾ c. boiling water
1 c. (½ pint) peach ice cream
1 c. cold milk
1 package (4 serving size) Vanilla instant pudding and pie filling
½ c. Cool Whip non-dairy Whipped Topping, thawed
1 baked 8 inch pie shell, cooled

Dissolve gelatin in boiling water. Add ice cream; stir until melted. Combine milk and pudding mix in small mixer bowl. Beat at low speed of electric mixer for 2 minutes. Add gelatin mixture; whip until thick and fluffy. Fold in whipped topping; spoon into pie shell and chill about 2 hours. Garnish with additional whipped topping and fresh or drained thawed frozen peaches and raspberries, if desired.
