1½ lbs ground turkey, preferably thigh meat
1 Tbsp minced fresh sage leaves
1 Tbsp minced fresh rosemary leaves
2 tsp minced fresh thyme leaves
2 tsp minced garlic
Kosher salt
fresh ground black pepper

Sauce:
¼ cup mayonnaise
¼ cup whole berry cranberry sauce
1 tsp grainy Dijon mustard
1 tsp minced garlic

1½ cups Swiss chard, slivered and fresh
2 tsp Extra virgin olive oil
½ tsp fresh lemon juice

8oz Brie cheese cut into 8 slices

1. Mix the patty ingredients including 1 tsp salt and ½ tsp pepper
2. Gently form four patties of equal size, each about ½" thick
3. Make indentation in the center of each patty (with thumb or back of spoon) about 1" wide to prevent doming while cooking.
4. Refrigerate until ready to grill
5. Prepare grill for direct cooking over medium-high heat (400° - 500°F)
6. Combine all sauce ingredients with ¼ tsp salt and ¼ tsp pepper
7. Whisk oil, lemon juice and a pinch of salt and pepper.
8. Add Swiss chard and toss to combine
9. Brush both sides of patty with oil and then grill with the lid closed, until fully cooked (165°F), 8 to 10 minutes, turning once.
10. Add two slices of cheese to each patty 30 seconds to 1 minute of cooking to soften.
11. Build each burger on a bun wit a patty, sauce and dressed Swiss chard
