Meatloaf:
3 lbs ground beef
2 eggs
1 cup oatmeal
1/2 tsp salt
1 finely chopped onion
1/4 tsp pepper
1 tbsp parsley

Topping:
1 cup ketchup
2 tbsp brown sugar
1/4 tsp ginger
1/4 tsp dry mustard

Directions:
Directions:
Preheat oven to 350°.

Mix the meatloaf ingredients together until well combined.

Shape into 1 large loaf. Make a shallow basin along the top of the loaf.

Mix the topping ingredients and pour over the loaf. Make sure the topping covers the sides as well.

Bake for 1 hour or until center is cooked through.

I love this recipe. I got the original sometime around 1985 from a coworker, and I haven't changed a thing. Of course, it's best when served with mashed potatoes and peas, and the leftover meatloaf (if there is any!) sliced thin with mayonnaise and more ketchup makes delicious meatloaf sandwiches.
