1 red bell pepper
8 oz. sliced baby Bella mushrooms
1 qt. water
1 c. snow peas
1 bunch green onions, chopped
1-14 oz. can diced tomatoes
2 cans hearts of palm sliced in 1/4 inch rounds
1 can coconut milk
1 tsp. salt
1 tsp. paprika
1 tsp. cumin
1/2 tsp. basil
1/2 tsp. thyme
1 lime leaf

Directions:
Directions:
Cook pepper and mushrooms in water until peppers begin to soften. Add all except the lime leaf. Cook about five minutes. We like the peas to still be a bit crisp when served. Last add the lime leaf, but do not continue cooking. Just submerge the leaf for a few minutes Tues to add a hint of lime.
