2 large beets
8 oz radishes
4-5 green onions, chopped
1 European cucumber, diced
1 c peas
I c. coconut or almond based plain yogurt (vegan)
1/3 c. home made vegan sour cream or mayo
1/2 c. lemon juice
2 tsp. mint
1 bunch fresh dill, chopped
1/2 tsp. salt
water

Directions:
Directions:
Roast the beets in the oven until you can easily put a fork in them. Let beets cool. Prepare all other ingredients. Combine in a bowl. Cut up the beets in small pieces. Add to the soup. Mix in all remaining ingredients using just enough water to make as juicy as you like. You can blend a few of the beets with water for a darker red soup. Serve cold.
