Ingredients:
Ingredients:
3 ¾ cups granulated sugar
1 15-oz. can pumpkin🎃
1 cup vegetable oil
4 eggs 🥚
3 ⅓ cups all-purpose flour
2 tsp. baking soda
2 tsp. pumpkin pie spice
1 ½ cups chopped pecans
2 ½ cups heavy cream
1 8- oz. carton sour cream
1 cup powdered sugar
2 Tbsp. bourbon or milk

Directions:
Directions:
1. Preheat oven to 350ºF. Grease bottoms and 2 inches up the sides of two 9 X 5- inch loaf pans.
2. In a large bowl 🥣 stir together 3 cups granulated sugar, the pumpkin, 🎃 oil, ⅔ cup water, and the eggs until combined. In a medium bowl whisk together flour, baking soda, pumpkin pie spice, and one tsp. salt.
Stir into pumpkin mixture. 🍜 Spoon into prepared pans. Bake 1 hour or until toothpick comes out clean. Let cool in pans on wire rack 10 minutes. Remove from pans. Let cool completely.
3. Grease a baking sheet. Place pecans close together in a single layer on prepared sheet pan. In a small saucepan bring 3 Tbsp. water and remaining ¾ cup granulated sugar to boiling, without stirring, over medium. Cook, without stirring, 6 minutes or until golden, brushing pan sides with water to prevent crystals from forming. Pour over pecans. Let cool; break into pieces👩‍🍳.
4. In a bowl, beat heavy cream, sour cream, powdered sugar, and bourbon with mixer on high until stiff peaks form. 🍜
5. Cut one loaf into 1 inch cubes. (Freeze second loaf up to one month). In a large trifle dish make three layers of bread cubes, pecans, cream, and, if desired, pomegranate seeds and caramel ice cream topping. Serve immediately or chill up to 8 hours. 😋
