1 fennel, diced
1 each red, yellow, oragne pepper, diced
1 red onion, diced
2 garlic cloves, minced
⅓ cup olive oil
1½ salt
½ tsp black pepper
2 cups of orzo


Dressing:

⅓ cup fresh lemon juice
⅓ cup olive oil
1 tsp salt
½ tsp pepper

Topping:

4 green onions, finely sliced
¼ cup toasted pine nuts
¾ lb of feta, crumbled
fresh basil

Directions:
Directions:
Roast vegetables in 425ºF oven for about 40 minutes, turning once. Add dressing and toppings.
