3 tbsp Cornstarch
1 (14oz) Sweetened Condensed Milk
2 tbsp Butter
1/2 c Coconut Flakes, Toasted
1 1/3 c Water
3 Eggs Yolks beaten
1 tsp Vanilla Extract
2 medium Bananas
Lemon Juice to brush the bananas with to prevent browning

Directions:
Directions:
In a small dish in oven toast.
In heavy saucepan, dissolve cornstarch in water, stir in condensed milk and egg yolks, cook on medium heat stirring until thickened and bubbly. Remove from heat and add butter and vanilla, cool slightly. Fold in coconut. Slice bananas, dip in lemon juice and arrange on the bottom of pie crust. Pour filling over bananas and cover. Chill at least 4 hours or until set. Top with whipped cream, and garnish with toasted coconut if desired.
