Ingredients: 1 1/3 c. graham cracker crumbs, plus a little for topping
5 tbsp melted butter
16 ozs fresh strawberries, divided
1 ½ c. milk
1 ¾ oz pkg Strawberry Crème Pudding
4 oz pkg. cream cheese, room temperature
½ c. powdered sugar
4 fresh strawberries, mashed
1 8 oz tub of cool whip, divided

Directions:Mash 4 strawberries for the cream cheese mixture, set aside. Slice the remaining strawberries. Spray an 8 x 8 baking dish or pan with Pam
In a medium mixing bowl, combine the graham crackers crumbs and melted butter and mix well. Press into the sprayed pan and place in the freezer for a minimum of 30 minutes.
In a small bowl mix the 1 ½ c. milk with the package of strawberry pudding. DO NOT use the two cups as directed on package. Refrigerate until ready to use.
Place the cream cheese, mashed strawberries and powdered sugar into a mixing bowl. Cream until soft and well mixed. Fold in 1 c. Cool Whip and gently mix.
Remove crust from the freezer and completely cover with a single layer of strawberries. With a spatula, place dollops of the cream cheese on top of the strawberries and gently spread until complete covered.
Spread the pudding layer over the cream cheese. Top with remaining whole and sliced strawberries and sprinkle with more graham cracker crumbs.
Refrigerate for at least 2 hours before serving. |
