Crust: 4 whole graham crackers ( 2 squares each)
1 tbsp butter, melted;
Filling: 3 (8 oz) bricks 1/3 less fat cream cheese, softened
1 cup sugar
¾ c. sour cream
½ tsp finely grated orange peel
1 tbsp. orange juice

Directions:
Heat oven to 325 degrees. Coat an 8” spring form pan with Pam.
Crust: Break graham crackers into a plastic bag and using a rolling pan, finely crush crackers. Transfer to prepared pan and stir in butter until blended; press firmly over bottom of pan.
FILLING: Beat cream cheese and sugar in a large bowl with mixer on medium speed until smooth. Beat in eggs, 1 at a time, just until blended. Pour over crust. Bake 45 minutes or until edge of cheese cake puffs slightly and center still jiggles slightly when shaken. Turn off oven (leave door closed); let cake cook in oven for 1 hr.(DO NOT OPEN OVEN DOOR). After an hour, remove cheesecake and carefully run a thin knife around edge of pan to release cheesecake. Cool on a wire rack. Remove pan sides; place cheesecake on serving plate. Cover and refrigerate at least 4 hrs or up to 3 days.
NOTE: Top with Cherry pie filling or drizzle with chocolate or caramel sauce.
