Ingredients: Dough: 2 packages active dry yeast ½ c warm water (105ºF - 110ºF) 1 T sugar 1 c milk ⅓ c butter flavor Crisco, melted ⅓ c sugar 2 tsp salt 2 eggs, beaten 5 c all-purpose flour (more or less)
Filling: 8 T butter, softened 1½ c packed brown sugar 2½ T ground cinnamon 2 tsp cornstarch
Icing: 8 oz cream cheese 1 stick butter, softened 3 c confectioners sugar 2 tsp vanilla extract pinch of salt

Directions:Dough: With your mixer, use a dough hook to mix yeast, water and 1 tablespoon sugar. Scald milk, when cool, add in shortening, rest of sugar, and salt. Add beaten eggs and yeast. Now add flour 1 cup at a time until the dough starts to pull away from the edge of the mixing bowl. This can be anywhere from 4 - 6 cups and can vary from time to time. The dough will be sticky. Cover the bowl with parchment paper and let it rise until it doubles in size (1 - 2 hours). Punch down the dough and knead well. Roll the dough into a 16" x 22" rectangle.
Filling: Spread the butter on the rolled dough, leaving ½" edge around the dough. In a small bowl, combine the brown sugar, cinnamon, and cornstarch. Sprinkle mixture over dough and gently press the mixture into the dough. Roll up the dough starting from the long side and cut into 12 sections (approximately 2" thick).
Line a 9" x 13" baking dish with parchment paper and arrange the rolls in the pan. Cover with parchment paper or clean kitchen towel and allow to rest for 60 minutes. Place cinnamon rolls into an oven preheated to 350º and bake for 21 - 23 minutes, or until the rolls are light golden brown.
Icing: Beat all ingredients at medium speed until well blended and smooth. Spread over the hot cinnamon rolls. |

Notes: Make sure to not add anything hotter than 110º to the yeast. To easily scald milk, microwave for approximately 2½ minutes, stirring every 30 seconds after the first minute. Make sure not to boil.
