3 Tbsp butter
2 large carrots, chopped
1 medium onions, chopped
4 cups chicken stock
1/4 cup long grain rice
1 tsp. salt
1/2 tsp white pepper
1 cup heavy cream

Directions:
Directions:
Melt butter over low heat. Add carrots, onion cover and cook for 15 minutes. Stir in stock, rice, salt and pepper. Cover and simmer for 30-45 minutes. Puree' in food processor. Stir in cream and bring to a simmer. Serve.

Sarah brought this recipe to us. Our family was not big on soup, usually going for salad. One Christmas Sarah made this for us to "sip" while I was preparing the meal. I loved it, and so did everyone else!
