3 med. zucchini, grated (4 c.)
2 large eggs
2 cloves garlic, minced
1/2 tsp. dried oregano
1/2 c. grated parmesan cheese
black pepper, salt
pinch red pepper flakes
3 c. shredded mozzarella
2 tsp. chopped fresh parsley
1/4 c. cornstarch

Directions:
Directions:
Preheat oven to º425. Line baking sheet w/parchment. Grate zuchini and wring out excess moisture with dish towel or cheesecloth. In large bown mix zuchini, eggs, garlic, oregano, 1 c. mozarella, parmesan, corn starch, salt and pepper. Stir well til combined. ransfer to baking pan and pat out into a "crust". Bake til golden and dried out,approx. 25 min. Sprinkle crust with remaining mozarella, red pepper flakes and parsley. Bake til cheese melts, approx. 8-10 minutes. Cut and serve with Marinara.
