1/3 cup vegetable or canola oil
1/2 cup honey
1 tsp. vanilla extract
2 eggs
1 cup mashed bananas
1 3/4 cups whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1/4 cup hot water
1/2 cup chopped walnuts/pecans (optional)

Directions:
Directions:
Preheat oven to 325 degrees. Grease a loaf pan.

Ina large bowl, beat oil and honey together. Add eggs and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water; stir to mix and add to batter. Blend in chopped nuts. Spread batter into prepared pan.

Bake for 50-60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing.
