Directions: IN A MEDIUM BOWL MIX THE SUGAR, WATER AND CORN SYRUP. IN A HEAVY SAUCE PAN, SLOWLY COOK THE MIX ON LOW HEAT STIRRING CONTIGUOUSLY UNTIL THE SUGAR IS DISSOLVED. TURN THE HEAT UP TO MEDIUM AND CONTINUE TO COOK WITHOUT STIRRING UNTIL IT REACHES 250' F. ON A CANDY THERMOMETER. AT 240 DEG. F. START WHIPPING THE EGG WHITES, IN A LARGE BOWL BEAT THE EGG WHITES UNTIL THEY REACH HARD PEAKS. REDUCE THE SPEED OF THE BLENDER (BUT KEEP ON BLENDING) TO LOW AND SLOWLY AND CONTINUOUSLY POUR IN THE SUGAR SYRUP MIX INTO THE EGG WHITES. STIR IN THE VANILLA EXTRACT. NOW SHIFT THE BLENDER TO HIGH AND CONTINUE TO BEAT THE MIXTURE UNTIL IT LOOSES ITS GLOSS AND IT HOLDS ITS SHAPE (ABOUT 15 MINUTES) CHECK THE CONSISTENCY IF THE MIXTURE IS STILL SHINNY AND RUNNY BEAT IT FOR ANOTHER 5 MINUTES ON HIGH. LINE A BAKING SHEET WITH WAX PAPER AND SPRAY TWO SPOONS WITH NON STICK COOKING SPRAY. USE THE TWO SPOONS TO DIP OUT AND FORM ROUND BALLS OF THE DIVINITY AND PLACE IT ON THE WAX PAPER. PUSH IN A PECAN HALF. LET REST AT ROOM TEMPERATURE FOR AT LEAST 2-HOURS, OVERNIGHT IS BETTER. WILL KEEP IN A SEALED CONTAINER FOR TWO WEEKS. YOU CAN FREEZE THEM IN AN AIRTIGHT CONTAINER FOR TWO MONTHS.

Notes: WE ALWAYS HAD DIVINITY AT CHRISTMAS TIME. I ASKED AUNT HELEN ABOUT IT AND SHE SAID MAMA MADE IT. BUT IT WAS ONE THING I ALWAYS LOOKED FORWARD TO EACH CHRISTMAS.
** ITS BEST TO MAKE DIVINITY ON DRY SUNNY DAY. IF ITS RAINING AND CLOUDY CHOOSE ANOTHER DAY TO MAKE IT.
