1 lb. Hot Italian Sausage, casings removed
3 Cloves garlic, minced
1 large onion , chopped
Kosher salt
Freshly ground black pepper
32 oz. Low-sodium chicken broth
4 large potatoes, diced or sliced
1 bunch curly kale, washed and leaves stripped and very finely chopped.
3/4 cup heavy cream OR half and half
Grated Parmesan, for serving

In large pot over medium heat cook sausage until browned, breaking up clumps into small pieces.
Add garlic and onion and cook until golden. Season with salt and pepper. Add chicken broth
and potatoes and enough water to cover the potatoes and cook until potatoes are tender.
Stir in kale and cook until tender and bright green, maybe 15 minutes depending
on how tender you like the kale.
Stir in cream. Garnish shredded shaved parmesan cheese if you desire.
