Full Batch Half Batch
Flour 10 cups 5 cups
Sugar 7½ cups 3¾ cups
Baking Powder 4 tbsp. 2 tbsp.
Salt 4½ tsp. 2¼ tsp.
Shortening* 3⅓ cups 1½ cups, plus 2 tbsp.

* Mix may be made with softened regular margarine, but must be refrigerated or frozen and brought to room temperature for use. Do not use soft or whipped margarine.

Spoon flour into large 8 quart bowl. Add sugar, baking powder and salt. Stir until mixture is blended. Add shortening and work into dry mixture with your hands until uniformly blended. Mix should resemble coarse corn meal. Put into air tight containers. Do not pack down. Cover. Store at room temperature. To use mix, spoon lightly into a measuring cup, level with spatula.
Makes 21 cups for full batch.
