3 medium carrots
1 cup canned peas
4 hard boiled eggs
6 kosher dill pickles
1 cup olive oil mayonnaise
3/4 cup diced ham

Directions:
Directions:
Boil the potatoes for 30 minutes. During this time peel the carrots. After 30 minutes add the carrots in with the potatoes and continue boiling them for another 10-15 minutes. After the potatoes and carrots have boiled remove them and let them cool. When the potatoes have cooled peel off the skin. Dice your potatoes, carrots, hard boiled eggs into little cubes. Afterwards chop the pickles finely and add all of the ingredients into a bowl and combine.

When preparing Olivier salad one must feel jolly. If the preparer is pessimistic, the dish will come out bland and giving that quality to anything that comes near it. During the cooking process the boil of the vegetables can mimic the gentle roar of the combined conversations of a extended family telling tales of their exploits during the year. Side dishes can supplement any feast, although they are not focus, they can still add spice to bland conversations, or can supplement even the sweetest of exchanges. A bite can fill one with the combined nostalgia of years passed.
