1.5 cups of rice
1 can of sweetened condensed milk
1 cup of whole milk
5 cups of hot water
2 cinnamon sticks
1 tsp ground cinnamon

Directions:
Directions:
1. In a mixing bowl, add the rice, whole milk, sweetened condensed milk, cinnamon sticks
2. Pour hot water into mixture and stir until the sweetened condensed milk dissolves
3. Allow mixture to come to room temperature. Cover the bowl with plastic wrap then refrigerate the mixture for a minimum of 2 hours. We recommend refrigerating overnight for a more concentrated flavor.
4. Uncover the mixture. Remove the cinnamon sticks and discard
5. Strain the mixture to separate the rice. Reserve the liquid
6. Add the rice and 1.5 cups of the strained liquid to your blender. Blend for 3 minutes until the rice is liquefied.
7. Strain the blended rice back into the reserved liquid
8. Check to make sure that the rice has been completely liquified. There shouldn’t be any bits of rice remaining in the strainer. If there is blend the horchata mixture again.

When preparing Horchata one must feel confident. If the preparer of Horchata is pessimistic, the dish will come out flavorless. The moment I uncap the can of condensed milk and the smell reaches my nose, I am transported to when I was a kid and my Grandma was teaching me how to make it for the first time. Mama Aide closes her eyes and slows down her sipping whenever she drinks horchata. As I am preparing myself mentally to move away next year, I know the transition would be easier if I could carry the satisfying fulfillment homemade horchata gives me. Horchata can make anyone feel ethnic, especially when consumed while eating tacos.The famous drink horchata is as Mexican as anyone named Jose.
