1/4 C. Butter melted
1 1/2 C. Vanilla wafer crumbs
1 tsp. Cream of tarter
6 Eggs, separated
1 1/2 C. Sugar
19 oz. Cream Cheese
3 Tbs. Flour
1/2 Tsp. Salt
1 pint of Sour cream
1 Tsp. Vanilla

Have all ingredient at room temperature.

Butter spring form pan generously.

Mix butter and crumbs reserving 1/4 C. Press remainder firmly on bottom of pan.

Add cream of tarter to egg whites and beat until foamy. Add 3 Tbs. of sugar and beat until stiff and set aside.

Beat cheese until soft. Mix 1 1/2 C. sugar, flour, and salt and add to cheese. Add egg yolks one at a time beating thoroughly after each. Add sour cream and vanilla. Mix well and fold in egg whites. Pour in prepared pan. Sprinkle with remaining reserved 1/2 C. crumbs.

Bake 325 for 1 1/4 hours or until firm. Turn off heat and leave door open for 10 minutes. Remove and let cool on a rack away from drafts. Chill.
