4 C. Sliced yellow squash
1 Medium onion, sliced
2 Medium carrots, grated
1 8oz. pkg. Pepperidge Farm herb stuffing mix
1/2 C. Sour cream
1 Can of cream of mushroom soup
Salt & pepper to taste
1/2 C. Melted butter

Directions:
Directions:
Pre-heat oven on 350º. Cook squash, onion, and carrots until tender and drain. Mix sour cream and cream of mushroom soup. Mix sour cream mixture and vegetables. Coat stuffing mix with butter. Place half in baking dish. Add vegetables and top with stuffing mix. Bake for 30 to 45 minutes.
